Tofu is the pen name of Ted Lai, AKA the PodPiper. However PodPiper seems like an odd name on a blog/podcast about food. Since Ted loves tofu, he chose that as his pseudonym for Wok on the Wildside. Tofu is a father of two, husband of one, and cook for many (in his free time). His main occupation is as the Director of Technology and Media Services at Fullerton School District where he helps teachers learn how to integrate technology into teaching and learning. More importantly, he’s been a strict vegetarian for a little over nine years and on the vegan spectrum for the last five or so. Not counting a few dark years when he was starving in college, he’s been vegetarian for about 23 years. One of his happiest accomplishments is having a happy, healthy family that loves his cooking. There’s something wonderful about two daughters who ask for more brown rice and gai-lan (chinese broccoli). That’s enough bio for now. More will be added later.
